How we craft our wines

From sprout to grape
We make sure of the quality of our wines from day one - from planting the young vine to harvesting its ripe grapes. In the early phase of its life, a vine requires intensive care and a lot of manual work is required in the first three years before it produces its first yield.
But even after that, every vineyard requires constant attention and careful management . From pruning the vines to tending the vineyards and harvesting: we are always close to nature and ensure that every step meets our high quality standards .
In this, we ensure that the best of the grape is passed down to every bottle of wine we produce.

Timing the harvest
In autumn, when harvest time approaches, one of the most exciting and intense phases in viticulture begins: Finding the right timing for harvest.
We check our vineyards every day to find the perfect moment for harvesting. We pay particular attention to the ripeness of the grapes and check analytical parameters such as the must weight (i.e. the sugar content), the acidity and the pH value, as well as the physiological ripeness (colour of the seeds, hardness of the berry skin). On top of that, the health of the grapes and as well as the taste are also vital factors.
Each plot is carefully inspected to ensure that the grapes are harvested in perfect condition. This is the only way we can receive the full potential of the grapes and produce the best possible wines.

Being careful in the Cellar - Where grapes become wine
The crucial process that transforms the fruit of our vineyards into first-class wine happens in the cellar. After the harvest, the grapes are carefully taken to the press, where we work with the utmost care and modern technology to optimally preserve the aromas and characters of the grape varieties.
Fermentation is carefully monitored to determine the perfect moment for the next step. Each wine is individually managed - from the selection of fermentation methods to maturation in barrels or tanks.
Here in the cellar, craftsmanship and many years of experience are required to allow the wines to develop their full potential with the necessary rest and time.
We thereby create wines that reflect the character of our terroir at the highest quality .
